Have I mentioned how much I LOVE one pot meals?! These are perfect weeknight meals when you’re in a rush! The hardest part of the recipe is browning the meat and tossing the garlic and onion in a food processor. If you can handle that this will be a quick meal for you too!
I only had cheddar cheese on hand but I didn’t feel like it was missing anything by not using the Mexican blend cheese. With only 2 of us eating it we have tons of leftovers!
