Stuffed Shells with Sausage and Spinach

I’m a sucker for stuffed shells! I figured Alen would enjoy them with some meat which is why I chose this recipe. The only modification I made was I used ground Italian sausage so I didn’t have to deal with any of the casings and what not. I would recommend using a spicy sausage if you like extra heat, I used mild and it was a little too mild for my taste. I also used a little extra ricotta, I just love it and wanted it to be extra creamy. The mixture was a little runny but they did recommend not tossing the juice from the canned tomatoes so I would just drain each spoonful as I went so they weren’t falling apart. I’d also recommend adding a little Italian seasoning (about 1 tbs.) and some salt, pepper and oregano (about a half tsp. each). I also baked mine with the pasta sauce right in the same dish. I put enough on the bottom of my baking dish to cover the bottom and then I added my stuffed shells and poured the rest of the sauce on top! This mixture made a ton of shells! My phone also was about to die so I didn’t have flash to capture all of that deliciousness!
