{Beer Cheddar Soup}

I’ve made this recipe once before and love it because it’s so simple! I can’t remember off hand what kind of beer I used for the first batch but I did good ol Bud Light last night and I noticed the beer flavor wasn’t as strong. I ended up adding another half of a Budweiser and that took care of my flavor problem. I would suggest not using any light beers and be really careful if you’re trying to be fancy and use craft beer. Nothing too hoppy or dark! I also used the rest of the red skinned mashed potatoes that I had on hand instead of peeling a potato, I’m lazy what can I say, still tasted fabulous!
