{Bacon Wrapped Pork Tenderloin}

This was by far one of my favorite recipes so far and I’m not even a huge pork person. I ended up combining 2 recipes because I originally was going to go with a apple/cinnamon recipe but Alen said he wanted bacon so he got bacon! Like the apple cinnamon recipe I cut the loin about 7 times 3/4 of the way through and added sliced apple. After that I pretty much followed the recipe below. The recipe calls for 3lbs of pork loin and I only had one, I forgot to cut the marinade recipe in half so I ended up letting it marinate in all of it overnight and then right before cooking dumped out about half of the marinade. What was super weird though is the apple basically disintegrated after cooking for 2.5 hrs but this may have been what made the loin so moist (uh hate that word but I had to do it). I ended up covering mine for the last 30 min because my bacon had cooked to my liking and I didn’t want it to burn! I paired it with homemade garlic red skinned mashed potatoes and steamed veggies! Again super easy to make the mashed potatoes and it’s even easier because you don’t have to peel them! Clean and then cut them into smaller cubes, boil until tender, mash and add garlic powder, salt, pepper, butter, sour cream and milk!
